Do you have to cover the buried compression fitting in denso tape to stop cement corroding it? I'm not sure. I think your plans perfect if you can bury the fitting. Such a nightmare... Hope it works out

Alkathene in our kitchen too. I once very stupidly got a wrench on the tap with no counbter-force to try and open it. ! The pressure is high here and boy did I get a soaking. I got it back to a very slight weep. This is some years ago but I think maybe a drop every few minutes. It self sealed over the next few days I think because the water here is very hard. Been like that ever since. With a lot of luck if Rocky's weep is also tiny it might have gone by the time he gets back so he can charge for "wasting his time..."

If you can work out a way to re-pipe it diverting it back above ground that would be the best way to go about it.
Getting any fitting on below the ground's going to be very difficult to do rocky - clean and solder an end feed socket would be what I would do but only if I couldn't find any other means.
If you can get a compression coupler on and tighten it up successfully then yes you could use some pex pipe onto the other side of it.
If it's just a tiny weep on that coupler - remove it and wrap some ptfe around the cone then tighten it back up, that should do the trick, you don't really want to be getting involved with that pipework under the floor.

I’ve tried ptfe & paste again but a slight weep The fucking woman is getting on my nerves now too. Sending me messages every 20 minutes. She’ll be blocked soon. I’ve told her Monday. My plan is to cut & chip the floor out out big enough to get a pipe slice in, cut pipe on a straight bit, endfeed & solder then leave the pipe uncovered. The cupboard bottom shelf will hide it. Then I’m off 🏃♂️
