So if you’ve got a pressurised heating system. Not a combi but a boiler, S plan to an unvented. Will it still work if the pressure drops to zero or very low? How low would work?

Usually a sensor on a system boiler fr low pressure, and at least a high limit stat on a Heat Only.
Ive fitted Intergas boilers, sealed the system & run them at a very low pressure .5Bar 👍
Intergas boilers are the ballocks!!

I wouldn't normally expect to work at zero rocky, it could work at under 1 bar, though it's going in the wrong direction.
Have you got one working at zero?
I'd suspect a faulty gauge as the starting point if it is.

That's a very low pressure for a modern boiler to keep working at.
Could it be an old boiler that was vented when it was fitted then had the header tank replaced with an expansion vessel at sometime due to issues? This would explain how it still works at such low pressure.

The lowest setting on any boiler pressure switch varies, it depends on the boiler. Plus, boiler pressure switch or low pressure switch can get blocked up with shit & give incorrect readings.

WB heat only I have seen WB running on 0 pressure rocky, I think baxi heat only kick out at 0.4 bar

It’s a bit of a mystery really. Something somewhere isn’t 100% but the system runs as it should. I’m not losing sleep over it, I’d just like to find the little issue.
