When you fit a new door, the hinge cut out on the frame isn’t the same for the new door.
How do fill it & what with?
Same for the latch keep

I've seen joiners cut a piece of plywood the same shape as the old hinge was and use this to fill.

As EF has said. Then Plastic Wood filler, sand it down before fitting new door.
If you’re not very experienced in Joiner work, fitting a door can be a cunt of a job!!

If I’m fitting a new door into an existing door frame, I usually mark the hinges on the door so they line up with the existing hinge cut out on the frame. No need to fill the bugger then . 😉😉

One old Joiner I worked with would use thin pieces of Ply/MDF to cover the Hinge Cut-Out in the Door Frame. Glue them in place & drill small holes & whack in Wooden Skewers to hold them in place. It avoids using nails or screws, if you need to cut the new hinge rebate close to the patch. Hit a nail or screw with a chisel or Router bit & its fucked!!
