I've never had problems getting ancient olives off but not sure if I'm maybe kinking or scratching the pipe too much in the process . I've always used the bang it with adjustables sliding on the pipe method. Or if I don't have enough room I put some grips on an lightly twist the olive round (thats the method I'm not sure I should be using but it always works).
Your first method is ok, Dafty, but gripping an olive and twisting risks damaging the pipe. Treat yourself to a Monument olive puller. You'll wonder why you hadn't bought one years ago.
As above really good tool but for me it's a splitter quick and easy and you feel the applied force better, although if your thinking using it for 10mm, it's back to the hacksaw.

Have you seen my Dads technique for removing olives? It's pretty cool, so good Tom even made a video on it. No good for pipes in position though.

I have a god given olive splitter and she will tell you so herself when she comes on, but not one of those you use on the cones, I always got olives off one way or another without one but i do believe they DO make the job easy, so i might borrow one off a mate of mine to do a video for others , So yea, I'll do one,

I've got two tools for olive removal - Monument puller and their 15mm cutters. Couple of months ago I had a dead easy job to change a stoptap for an old dear. For some reason I prefer the puller. I know it's slow, but I like the control and knowing it won't damage the pipe. Anyway, when I was doing the stoptap I thought I would use the Monument 15mm cutter rather than my puller.
Wish I hadn't. For some reason I can't fathom, the cutter nicked the pipe on both of the s/tap's olives. I was careful so I don't understand it, and the cutter hasn't had a lot of use so it's really sharp. One of the nicks was minor and I filed it out, the other had gone through the pipe and made a small hole. So that decision turned a quick, easy job into a faff. Never had damage before, but then I don't use the cutter much. That's why I prefer the puller - no risk of damage.
Sounds like I should be trying the Dickie Dyer tool though.

I'm guessing that the puller comes into it's own when there's very little movement on the compression nut. Looks like you need a bit of room to get the Dyer splitter tool on the olive and same with the monument cutters.
Also looks like the Dyer tool is the only game in town when it comes to removing 28mm olives.
